Snack on vegan granola while watching Don’t Look Up on Netflix

Have you seen Don’t Look Up on Netflix yet? I recommend that you watch it but first make yourself a batch of the Best Granola in the World. This is actually a New York Times recipe and it uses almonds but we’ve replaced the almonds with pecans, lightly crumbled.

Vegan pecan, cranberry, coconut, maple granola AKA Clovelly Crunch

Ingredients (most of the dry ingredients come from Yellow Submarine in Cape Town)

250g jumbo oats

50g pumpkin seeds

50g sunflower seeds

25g linseeds

25g sesame seeds

30g flaked almonds (we use crumbled pecans)

1 vanilla pod (we use 1 tsp vanilla extract)

80ml veg oil

100ml maple syrup

70g dried cranberries

25g flaked coconut

10g freeze-dried berries (optional)

Method

Preheat your oven to 170C/gas 3.

Place the oats, seeds and almonds into a bowl and mix through with your hands.

Using a sharp knife, cut the vanilla pod in half lengthways and scrape the pulp out into a small bowl.

Add the veg oil and the maple syrup and whisk together until combined. Pour over the dry ingredients, then stir and fold until everything is fully coated in the oily syrup.

Spread the mixture in an even layer on a large baking tray and bake for 15 mins. Remove from the oven and mix through the granola with a fork, breaking up any clumps.

Bake for a further 20 mins then, as soon as you take it out of the oven, mix it with a fork again.

THEN add the cranberries, coconut and berries while the granola is still warm and stir through with a fork. Leave to cool and store in an airtight jar.

This is not cheap to make but worth it.
